Executive Chef Kevin Maniaci leads a talented and focused group. Kevin is proudly a local
boy who found inspiration to cook in his early exposure to the fruit and
vegetable bounty of Niagara. His career saw him stolen away to Toronto to
work with a number of inspirational chefs such as Brad Long and Michael
Potters. We lured him back home in 2003.
Eric Andersen and Keir Roy are Kevin's sous chefs, and he relies on the
remarkable skills of Lynn Jones-Adams as pastry chef.
